How do you Texans cook armadillo? Rare, medium or well done. You sticl 'em in the oven on their back and bake them until they slide out of the shell. "Aramdillo on the half shell" Taste like dark pork.

Tried Saddle of Beaver a few years ago at the Explorers Club. Excellent. No replacement for Zebra, though. I think I actually got into a New Yorker cartoon for raving about it to my mother. I had a beard and ponytail at the time...so qualified as a New York intellectual, worthy of reporting.
I think it alters the flavor if you leave the paint on them, though, IMHO.
But I could be mistaken.
