Before I gave up bread, I used to make my own Egg McMuffins at home. Basically I fry up eggs in Kerrygold butter and fry up some bacon. Real bacon. Not that Canadian bacon. I then would toast up some Thomases English muffins and apply more Kerrygold butter. Then I'd slide the eggs and bacon between it and add a thick slab of Swiss cheese. Maybe even a slice of grilled garden tomato (with pepper and olive oil) if it was in season. Really good.

I still have the eggs, tomatoes, butter and bacon. But no more bread these days. But now it's no longer an Egg McMuffin.
