I have eaten In n Out burgers for over 60 years. I don’t rememeber any ‘special sauce’.
I always get the Double Double meal.
There are no In and Out burger joints where I live, and I miss the food. I've been joking for months about all the burgers we'll eat.
Now we don't have to eat our Double Doubles next to stinking hippies.

IIRC, that is entirely a family operation. ONLY family members run In n Out.
It may have been the seasoning. It just didn’t taste quite right and it also did not sit well in my gut. A gal I know who has had their burgers both here and in CA says the CA burgers are a lot better.
They better open some outlets in the east and south. California will shut them down now.
But their double double animal burger is the best true drive through I know of
I like Culvers too
And Whattaburger for the chopped onions
We have a fairly cheap burger joint in the south called Cookout which is pretty good too

In and Out does not franchise
They own all stores and only reach out around 300 miles radius from their company distribution...they do not use PFG and Sysco as their distributors
Although in California they go out further to some like Nevada and Utah
In Texas it means from Dallas to San Antonio basically and Houston
Coming soon I think to Oregon and Colorado

When in California I always have an In-N-Out burger at least once.
Cheese can indeed cover over a multitude of cooking mistakes.
I understand that In & Out is opening some stores up here in Washington. Carl’s Junior showed up a few years ago. that’s fine with me; I like both. But for god’s sake, don’t
send any Californicaters with them. We have too many nutjobs as it is!
But then, White Castle was quite the going concern in Cincy back then. They were real good too...if you just had to have a Nickel bag of burgers to get your fix.

To be honest, I’m not a big fast food fan anyway. Don’t like pasty white high-processed bread, for health and taste reasons.
I’ve been a fan of Smash Burger, which is an up and coming chain. gourmet burgers with an option for whole wheat buns. Fuddruckers is good, too. They have a bakery and make their own buns.
Cheddar or bleu cheese work best.
That sounds good, although I don't usually add anything other than salt and pepper.
BTW, I don't "char" the burgers. I cook them in the covered charcoal grill with indirect heat (no flare-ups) until they're about 145F, then sear both sides until a mahogany-colored crust forms. By then they're up to 165F and ready to serve.
