I’ve never seen anyone react with any emotion other than happiness and satisfaction from consuming Bacon.
The people making this claim are stark, raving lunatics, IMO.
I developed an allergy to nitrates at age 50, 19 years ago. Many companies now sell salt cured bacon and cold cuts. The cold cuts are just ok it the bacon is every bit as good as nitrate cured.
Apparently, added nitrates are associated with hyperactivity and insomnia.
What the H*LL are they talking about?!? These researchers are DRIVING ME UP A WALL...oh no, might they be right, NO, they are WRONG...this can't be so! Is somebody reading and stalking my comments here, oh no...maybe I should not have posted that comment. This is all making me so ANGRY...and tired...I must take a nap.

Attention bacon lovers of the male gender:
Do you realize that the additives and byproducts in processed meats such as sausages and other cured meats contribute to systemic inflammation, a condition which is linked to enlarged prostate, circulatory problems and heart disease...
...but, more importantly, contributes directly to EDS in males over 45-50?
Furthermore, if you look for it, the bacon advertised as “uncured” (a misnomer...it’s simply cured with natural ingredients absent nitrates) is widely-available.
The more people which demand it will displace this cheap-a$$ed bacon which has become all-too-commonplace.
Better, “uncured bacon” has better flavor and I’ve found it to be regularly thick-cut.
Better still, I have lead in my pencil once again.
So yes, you can have your bacon and make it too.
