Good article. I really object the demonizing of whole milk and whole milk products. Especially its ban in so many elementary schools, just the age when children need that fat and cholesterol for brain development.
I render my own lard from organic fat back and make my own ghee - which is rendered butter. (This separates out the milk solids and lasts much longer.)
I keep table butter in a ‘butter bell’ so it's always spreadable.
I've been writing about these in my columns for years.
Also, remember, Canola oil (made from rape seed) and soy bean oil is almost certainly grown with Monsanto chemicals. Olive oil burns quicker than lard or coconut oil - and goes rancid to quickly, turning it into a very unhealthy oil.

Butter or olio? Seems like butter would be far better for you based on this fact alone:how much more easily it can be washed away
We buy the tubs of margarine and butter substitutes....never.
give me the REAL DEAL BUTTER, taste better, use less.
