What a great idea! I never thought of that. We have a great pancake recipe I got out of an old "Cast Iron Cookbook." All our kids grew up eating those from-scratch pancakes with real maple syrup. About age 12, they all knew how to make the from scratch and they've memorized the recipe. They hate it when we go to a restaurant and they have caramel colored corn syrup -- they are all real Maple Syrup Snobs! Our middle daughter branched out into various fruit syrups and I used to bring her bottles from all over the country on business trips. She really loved all the berry syrups from CA and Oregon. Olallie berry syrup is really great! You can order it from . If you ever get there, the Cream of Artichoke soup is to die for!

We tap around 500 trees in Northern VT - all buckets, no pipeline. Believe me, lugging two 5 gallon pails full of sap on snowshoes isn’t easy! Depending on the weather, we make around 90 gallons of syrup and normally lose about 15 lbs.

Our college had a field station at Lake Raystown, and we made maple syrup there every year. I was lucky enough to land a work study there getting ready for and working the sugar season. Those are some of my best college memories. I primarily cut and stacked all the cord wood for our sugar shack:

For the better part of my 60 years I've cut, split and stacked cordwood. In fact this is the first Winter for decades I haven't had to do that just to keep warm.

So to fire a sugar shack, I know you went through A LOT of wood and a lot of sore muscles, LOL!

For Christmas Mrs p6 got me some Vermont"dark" because I tend to favor that.

I think most people who really like syrup gravitate to the darker grades. The lighter (and crazy expensive) grades are what you need for confections though.

We also have a maple festival in my old home town. One of those great small town events for the family.

Hey that Maple Syrup cookbook on the Vermont Festival page looks COOL! I'm going to order one!

I've always cooked with maple syrup (even mixed with ground beef) despite Mrs p6 and the kids thinking it was nuts.

They've come around!
