OK, how do you make loaded baked potatoes without the potato??
Steam 1 lb (or whatever you want) cauliflower until really tender. Drain very well, and mash with a potato masher, or use electric beaters. Add some sour cream, butter, chives or sauteed onions, REAL bacon bits, salt and pepper. Mix well, and put into an oven proof casserole. Bake at 350 until heated through and bubbly. Add some grated cheddar cheese on top if you wish, and return it to the oven for 5 minutes to melt the cheese.
I use Hormel real bacon bits. A big bag of them at Sams or Costco is very reasonably priced, and I micro them for a few seconds to get them crispy before I add to the mixture.
We actually prefer this now to loaded baked potatoes. This dish has the texture of a loaded baked potato after it's been all mashed up and ready to eat. Yummm. And I don't really like cauliflower.
