The typical "tube steak" is loaded with nitrites to preserve it and give it nice color.

Every time I read a report about some study increasing the human life span I can’t help but think the cumulative effect of all these studies using mice that by now the life span of mice must be about 150 years.

"..recover more quickly,.." would be correct.

there hasn't been sodium nitrate in a hot dog in the US since the early 1970's.

I have heard that nitrates/nitrites are actually antioxidants and quite good for you, however when burned (as on a grill) they become nitrosamines, which are carcinogenic.

Guess again. I have a package of hot dogs that claims it contains sodium nitrite (among other things) and I bought them Saturday.

Maybe they didn't get the word.

Somehow I get the feeling that when my next heart attack comes, I won’t be getting a hot dog or eggs and bacon diet at the hospital.

What if I were to tell you that sodium nitrate and sodium nitrite are two different things? Would that change your "perception"?

Not true. Last time I bought hot dogs, which was within the past year, it said Warning this product contains nitrites or nitrates and if you have heart trouble take caution.
