Every time I read a report about some study increasing the human life span I can’t help but think the cumulative effect of all these studies using mice that by now the life span of mice must be about 150 years.

"..recover more quickly,.." would be correct.

I have heard that nitrates/nitrites are actually antioxidants and quite good for you, however when burned (as on a grill) they become nitrosamines, which are carcinogenic.

Not true. Last time I bought hot dogs, which was within the past year, it said Warning this product contains nitrites or nitrates and if you have heart trouble take caution.
