The major problem with buying fresh peas from you local green grocer or MegaMart is that peas convert over half of their sugar to starch in the first 24 hours after picking. Fortunately, peas dry, can, and freeze very well. Unless you can get your peas from a trusted local source, you will not get the full flavor of a fresh pea. I strongly recommend the flash frozen baby peas in the grocery. They are actually better than what you are likely to find in the fresh produce section.
The canning process was invented by Nicolas François Appert in 1809. His invention earned him a 12,000 franc prize from Napoleon. The first product to be successfully canned? Peas in leftover champagne bottles.
Peas are in the legume family and are one of the oldest cultivated crops in the world.

Thank you CC, and howdy everyone. Does anyone think Anna Nicole wanted to die? Is that a naive question? I read the other day that she told the nanny taking care of her baby to "wish her good luck and please please take good care of the baby." Sounded like she had a plan.
