Do we even have the capability to deflect a large meteor at this point (assuming we detect one incoming in the first place)? If not, why not? Surely it's technically possible?

Install a nuclear powered mass-driver, and dismantle the asteroid as you fling chunks of it away. Given sufficient time and mass-drivers, almost any sub-planetary mass can be moved in this way.
