How are you today? Did you get some of this cool front that came through yesterday?

Alright, I just gotta machaca attack, so I had to run to the srore for ingredients.
Heres what I do
Take a chuck roast cut it into 4 parts and brown it. then toss it in a crock pot. add 2 cans of rotell tomatos a pack of fajita seasoning, cayenne, chili and tabasco to taste.
Add 2 or 3 chopped chipoltes and chopped onion and pepper.
simmer til fork tender. shred the beef and lay out the drained
shredded beef onions and peppers on greased cookie sheets, then dryit as jerky in the oven at 180-225 degrees.
The dried machaca will keep in the freezer in storage bags very well.
When you want a burrito just throw a handful in a dish(no need to thaw) and crack in a couple of eggs, scramble and cook the eggs, serve in warm tortillas!

I did! It is still a gorgeous day..I thought I might have company today but the visit is delayed.. I am looking for an excuse to get out in the yard..no housewrk to do. Yay!
