There were Health inspectors checking everything, Every time I went to buy something that was a guy with a digital Thermometer sticking everything and writting the temp down on a form. I have been going for years and have never had a problem!
Don't cook them in the oven. To replicate the Fair sausage use a pan on the stove top.
At home after I cook my sausage and onions I put them in a crock pot with red sauce. Then when ready to eat I place them on a plate with the sauce and onions over the top. Everyone always asks for them when we do pot lucks.
