Once you admit that by converting to Judaism you are fully and completely Jewish, your ethnicity argument goes out the window.
Rabbi Steinsalz calls it a family. One can join and be added to a family by marriage (conversion) and birth.
Those seven laws translate into over 250 of the 613 Mitzvot.
And consider that many of the 613 are not applicable today, such as the laws of sacrifices, the Jewish king and Temple.

The Ethiopian Jewish community was large. Sadly they were persecuted and many, many were killed. Tens of thousands did escape to Israel.
There are also black Jews in South Africa.
"Messianic Jews" are not accepted as Jews by most of mainstream Judaism. You are Christians who have left the Jewish faith behind. I know you don't want to see it that way and you are certainly entitled to your beliefs, but that is the Jewish perspective.
Whatever your ethnicity I do not consider you or your family to be Jewish. That does not mean I think it was right to ostracize you.
Is there a concise description of your view, this view, of how the history of the Torah from beginning through its canonization?

Any number of Orthodox Jewish resources (both books and online) should give you the details. I believe the Talmud relates at just which points Moses wrote down each section of the Torah.
