Here is a dandy recipe from Ted and Shemane Nugent's cook book "Kill It and Grill It":
Bar-B-Que Black Bear
Sauce:
1/4 cup vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon dry mustard
1/2 teaspoon pepper
1 1/2 teaspoons salt
1/4 teaspoon garlic powder
1 teaspoon lemon juice
1 onion, minced
1/4 cup salad oil
1 teaspoon chili powder
5 dashes Tabasco sauce
1/2 cup ketchup
2 tablepoons Worchestershire sauce
1-2 pound bear roast
Place all sauce ingredients (except ketchup and Worchestershire sauce) in a blender and blend until smooth. Pour into a medium saucepan and simmer uncovered for 20 minutes. Add the ketchup and Worchestershire sauce, bring to a boil, and remove from heat. Pre-heat oven to 325 degrees. Place bear roast in a roasting pan and cook until well glazed, then baste with the sauce. Baste frequently and cook 3 to 4 hours (depending upon the size of the roast) until tender.

I don't recall what the grainage of the pellets was, but it couldn't be much... IIRC they were something like 8 grains.
I guess all the condiments & spices pretty much knock out the yuckie bear meat taste. Huh?
I think we are in agreement on this, that it is the waste of life that is offensive, not the hunt. If you eat what you kill, that's no different than buying meat from the supermarket, as killing for food is a natural part of human existence.

considering how many times I have seen folks mill around helplessly when a killing was required, I am not sure your argument holds water. Humans must train to be able to do anything.

Honest to God, properly taken care of bear meat tastes just like prime rib. The secret is to make a good shot, don't run the bear a long way before the kill, immediately skin the bear and cool the meat, and trim all fat off while processing the meat. Yes, I cut up my own meat too.
Bears are closely related to pigs and are a lot like pork, but a good roast is tasty! Yummy!
I saw a show on FoodTV last night about Stone Crabs.
In Florida they trap them and then pull off 1 claw and toss them back in the water.
It grows back in about 1-1/2 years.

I will just have to take your word on it. Mr. Ditter has given up bear hunting after a good long run. But we were told by our bear guides that the meat wasn't worth the effort it would take to pack it out. You do know the taste of meat is influenced by what the animal eats. Antelope grazing on sage brush is not fit to eat. South Texas deer eating brush & cactus do not taste as good as northern deer grazing on grain fields. Bears eating carrion...... well, you see what I mean.
Agreed. If one is killing to be able to kill when necessary, however, I think there should be enough practice to be found in the killing of things that need killing. Discrimination between targets is an important component of the reasons for being able to kill; it is not life itself which is the threat. It's a damn good thing to have a few million folks with the skills and experience to resist a totalitarian government or an invader, no doubt; but integral to that skill is the ability to distinguish friend from foe - without that, such a skill is not useful to the defense of liberty.
Maryland borders PA and we have 15,000 to 18,000 black bears here. Do you really think bears respect state lines and that there are only 300 bears in MD??? If you want trophy bears you need to hunt in Northeast PA. Two 800+ pound bears were killed in my county last fall. My county is about 500 square miles, roughly 20 by 20 square miles. There are probably 500 or more bears right here (Pike County, PA) - - about 75 miles from NYC. Bears break into homes, tear cars up and this summer one severely mauled a Lackawanna (PA) County woman in her backyard. They have tried to get into our home while we were sleeping and they have killed our sheep and goats.
So do catfish. And they taste reasonably good.

I have never in my life eaten a steady diet of anything that was as tasty as a steady diet of moose stew.
I'd definitely go for the goose jerky, but with my old teeth, it'd be hard to make a meal of. ;^)
BTW, smoked octopus is the great unknown delicacy of the Pacific Coast. Makes an outstanding sandwich!
