Well, yes, they'll remove this statue but the center of the cathedral is still the large, gold statue up above the altar said to contain a relic of St. James. There is a walkway up above the gold statue where visitors can walk and actually put their arms around the relic of St. James from behind. This seems unchanged.
This cathedral is also the end station of a major European pilgramge. It is also noted for the Botofogo, a giant incense burner that hangs from the high ceiling and, on special events, is lighted and swung by a group of men.
A single statue in a side chapel might come down but the history/legend of the cathedral and Santiago de Compestello won't change.
