The article says that before the chicken is fried, it's injected with marinade.Mmmmmm... sounds like a tastey way to do it!
I suppose a lot depends on their secret blend of herbs and spices that go into the maranade. I don't know what it is about Popeye's Hot & Spicey fried chicken, though. I like the way it tastes, but the dang stuff gives me the trots.

The best local fried chicken for me is from the deli dept. at a local Copps supermarket When I was attending the University of Michigan, there was a family-run soul food place down the street from my house. It was awesome- the fried chicken was out of this world, the biscuits were to die for. You would feel your arteries screaming every time you ate there, but it was worth it.
I really need to go and catch a Michigan game next year and see if that place is still there.

When I was in Mexico I noticed that the Asada brothers own almost all the resturants. You see their names everywhere... Carne Asada and Pollo Asada.

Best fried chicken I've ever eaten! Plump, delicious flavor, no heartburn. Always hot and freshly cooked all day..('til about 2:00).

Neighbors say that, since the restaurant opened, their streets have been jammed with cars and pedestrians and littered with Pollo Campero's crumpled wrappers. Edwards said her driveway has been blocked a half-dozen times by the customers and she has repeatedly called police to complain. She'll get a faster response if she calls PETA.

I can't quite figure it out.
The first time I had it, I thought maybe it was just a bad batch of chicken.
But I never had any problems with the regular recipe.
And I eat all kinds of other hot & spicey foods with no ill effects.
So that's why I keep trying the Popeye's hot & spicey.
And it would happen again and again. Same results: regular recipe OK, but the hot & spicey (which I like the taste better) just shoots through me like a goose. I can't figure it out.

The recipe and cooking method seem easy to duplicate and open up rival store with Hispanic name. And make the chicken better.
---> A: My first thought was the local outlet of the Central American chicken chain Pollo Campero, in the La Curacao department store downtown it has hourlong lines at all times of day and night. But the chain, as ubiquitous as KFC in Guatemala and El Salvador, really specializes in more of a garlicky, peppery fried chicken, sort of Popeyes-plus in style, although there is roast chicken too.
