You also have to remember when the cookbook was published and what were available ingredients. In the Dust bowl and great depression, lots of things might not have been available. Same during wars. During the Civil War chicory was added in the south as a coffee substitute. During rationing in WW2 many common ingredients were simply not available and all kinds of substitutions were offered.
That would be better with a couple of ripe strawberries.

The 1980 version of Joy of Cooking still has all the game preparation. My copy is split in half, has my notes tweaking recipes, spattered with the batter of favorite recipes.
New edition is two ridiculously thick volumes.
I’m approaching the age of already knowing how to cook what I want and not straying of the reservation, but not quite there yet.
Sad to say, I use internet recipes when I explore, not cookbooks.

My mother used to make a salad...a couple of lettuce leaves, a couple pineapple rings (canned), a blob of mayo in the pineapple holes, and sprinkled with grated cheddar. It was good.
Might easily transfer to white bread.
Now I have had that!! I'd forgotten about it, too.
And yup, good schtuff!!
In my part of the world it’s Dukes mayo.
