AVGOLOMENO!?!

Oh, how I would love a recipe for that. Had it a few times, long ago. Fabulous. Now, that restaurant is gone and no one knows what Avgolomeno is anymore.

My specialty is French Onion, with homemade croutons. People ask me to make it several times a year.

Borscht, chicken noodle, chicken and dumplings, chicken tortilla, hamburger vegetable, lentil, split pea, cream of tomato, cream of potato, cream of mushroom, cream of broccoli....

Tomato soup with grilled cheese sandwich or split pea soup made with a ham hock and served with garlic toast.

Is Clam Chowder considered a soup? If not, I’ll go with the Pea Soup..with a huge ham carcass rendered within...uhhh...actually, make that 1 week old Peas Soup, that can be cut with a knife before heating.

Lately, it’s tortilla soup. A number of restaurants here in Texas make absolutely delicious tortilla soup!
There was a time when I would have said Campbell’s Chicken Noodle, Double Noodle, or Tomato (made with milk), but none of the Campbell soups taste like they used to, since they started making them “healthier.” Today’s Tomato soup even changes the taste of the casseroles I used to make with it. Phooey!
