Joya’s note, I’ve not made these, putting them here as an idea to try later, except, I don’t care much for pecans / walnuts, so would try with almonds maybe. Link where I found this posted after recipe.

Chocolate Cranberry Power Bars (link at end)

These high protein, gluten free power bars are easy to make and remind me of Lärabar’s, though these are super fresh since they’re homemade, and they’re also not quite as sweet.

•2-¼ cups Pecans, Lightly Toasted
•¼ cups Cacao Powder
•15 whole Large Medjool Dates, Pitted
•1 Tablespoon Vanilla Extract
•10 drops Stevia
•2 Tablespoons Agave Nectar
•½ cups Dried Cranberries (you Can Add More If You Like)

Preparation Instructions
Blend pecans and cacao powder in a food processor until combined and coarsely ground. Add in dates and process until blended into the dry ingredients.

Process in vanilla, stevia and agave until well-combined. Stir (or work in) dried cranberries with a spoon or by hand.

Press the mixture into an 8×8 inch pyrex dish. Freeze for 1 hour, or until firm, then cut into 16 squares.

Makes 16 squares.

Subject: receipt, almond meal cake w/ cott. cheese
= = =
2 c. oat flour
1 1/2 c. almond meal
2 T. cinnamon
1 t. baking soda
1/4 t. salt
1 c. cottage cheese
3 eggs, beaten
1/3 c. butter, melted
1/2 c. honey
[*raisins, optional]

Preheat oven to 350*. Melt butter over low heat, then remove from heat to allow to cool.

Mix oat flour and almond meal and cinnamon and baking soda and salt.

Add cottage cheese, eggs, butter, and honey to dry ingredients.

Grease an 8x12 glass pan. Possibly a 9x9 would work. Pour batter into greased pan, bake for ??? not sure since this is being written while it bakes. Bake it till it is done. But not overdone.

[Take to friend’s for fond farewell as she leaves on yet another trek w/ dog and fifth wheel.]

Dittos that. Truvia is the only sugar that doesn’t cause me some negative reaction.
