Im positive that kimchi isnt kosher .... Thank G-d! Actually, as long as they don't use shirmp paste in it, it's pareve, so it's highly kosher! LOL!

Sunset Ridge here... and then East Catholic (for Hockey). Class of ‘76.

Short answer - my Mom only buys certified Kosher products, as do we. Meat is Glatt kosher, everything else is OU certified. The supermarket near our house has an enormous kosher section plus a kosher meat market and is in the process if building a pareve bakery.
My parents live in Dallas. The Albertsons near their home has a kosher deli, meat market and pareve bakery. So I can eat at their home, no problem.

What about making your own food with fresh produce, etc.?! If I had to live on pre-packaged stuff, I’d end up looking like a double-wide trailer! LOL!

we can use fresh fruit, fresh produce etc. Some fruits and veggies take a little bit more in preparation.
For example, Romaine lettuce requires a little bit of work to prepare because, as a species of lettuce, it attracts bugs. So we have to be very thorough in washing it because buggies are a no-no, thankfully!
Fruits and veggies are pareve and therefore okay. Eggs are considered pareve.
We don't go dilly with milk and cheese like the Lubavitches do ... they require that their milk products be under supervision. Some of those whom I call "meshuggah frum" (crazy religious), like my Rabbi and some of my relatives, even require their dishwashing liquid to be kosher.
Personally, I think that's over the top, but they have to do what is right for them.
Short version: Salads, fruits and veggies are fine when washed properly.
