Why is she just now filing the lawsuit, almost two years later? --
It is usually to injured plaintiff's advantage to delay filing until close to the time the statute of limitations expires. Makes the task of finding defensive evidence more difficult, and some defensive evidence may even be lost due to passage of time.

Suddenly, the fryer cover gave way and Blounts left leg fell into the deep fryer, the suit says. Bad headline. Only one leg fell into a fryer and the story still doesn't give any indication of how large the fryer was and how extensive the burns.
