It's impossible to update the software once the thing ships?
Some of it. What you are referring to is firmware type software though, and is normally only revised with new hardware.
For nav databases etc., it has a special data port. The built-in checksum makes sure it is from the manufacturer and is valid.

I would agree—but what if the leak happened in the cockpit area? That means the loss of cabin pressure at the worst place possible—and the flight crew may have been incapacitated even faster than normal.

Kind of tough to envision a scenario where a very professional flight crew flies an modern, highly redundant Airbus into the ground in a conventional in flight emergency situation without communication for a full 8 minutes.
Especially when they knew they were over the Alps.
Now they say they have lost the last several minutes of in flight data recording on data recorders specifically designed to capture and record the last several minutes on any in flight emergency
I could envision a problem with the pitot static system commanding a slow descent from the autopilot but for 8 minutes without communication?

OOps, “De Havilland Comet”
Air Comet was an airline, the Comet was a nice aircraft that had square windows leading to the aircraft disintegrating in flight.
