Lived in TX all my life and never heard of it. Our one grocery store’s salami selection consists only of Oscar Mayer cotto salami. Yep, just one grocery in town.

1-2 green Bell peppers with maybe a little onion sautéed medium to high heat about 3-5 minutes.
Then, with it, brown around 1.2 lbs ground beef or turkey.
That done, throw in two cans of spaghetti. Mix it all up till good and hot. Easy and hmm-hmm good.
(Serves 2-4)
Here’s a real easy one that’s my go to recipe for picnics and pot lucks.
Checkerboard Beans
Chop up 4-6 slices of bacon and get it frying up. Throw in one good sized chopped onion, I like a Vidalia, but really any type of onion will do. Cook until the bacon’s somewhat crispy and the onion is just starting to caramelize.
Dump the bacon, onion & any fat into a slow cooker.
Add a large can of baked beans, your favorite brand, and 3-4 cans of an assortment of other canned beans that have been rinsed and drained. (I’ve used pretty much every kind of canned bean and black eyed peas. A variety of color and size works the best).
Add one can of corn, also drained, or throw in a a cup and 1/2 of frozen corn. (I prefer the frozen, just tastes better IMHO).
Stir it up and add enough of your favorite BBQ sauce to make the whole thing a bit soupy, but not too much.
Cook on low for 5 or so hours.
Prepare for compliments.
Really easy, great to use up what ever you happen to have on hand and people really like it.
Another really easy recipe that I’ve done for the last few memorial day picnics (Got it from Martha Stewart - but stay with me)
Chipotle Honey Ribs
2 racks baby back pork ribs - about 4 lbs
Heat the oven to 400 degrees
Mix together 1/4 cup of honey, 1/4 cup dry mustard powder, & 1/4 cup of peppers in mud (my husband’s term for chipotles in adobe) chopped.
Lay out a few sheets of aluminum foil. Spread the chipotle-honey-mustard mix on the ribs and wrap them tightly in foil. Put on a baking sheet and throw in the heated oven for 2 to 2-1/2 hours. (I like to do this the day before the event)
Now, get the grill going. Spread some more honey on the ribs and cook on the grill for a few minutes on each side. Cut them between the bones and watch the crowd gobble them up.
The first time I made them, I tasted the meat after it came out of the oven and was afraid that the ribs would be too hot for most people, but the honey and the few minutes on the grill works magic to bring the chipotle heat under control!
In a large bowl, toss cauliflower florets with dices carrot (peel, split in hall, then chop) I like 2 parts cauliflower with 1 part carrot..but whatever turns you on..season to taste with salt, fresh ground pepper..i like to toss in a little red pepper flakes, maybe some dried basil..mix with just enough lite olive oil to lightly coat...spread out on non-stick tray..into a 325 oven for about 30 minutes..more or less depending on how crunch you like your veggies. Delicious side with most anything..and the extra freezes, and can be used whenever..

Wow. Up here, Oscar Mayer also sells Hard Salami in the same sort of put-up as the cotto. So, maybe talk to your grocery store manager. If they can get Oscar Mayer Cotto, they can get the Hard Salami, which, IMO, tastes better. Pricey, though. Could be why it isn’t offered? Some of our smaller stores just won’t stock pricier items.
Patrick Cudahay offers Hard Salami in a 12 oz vs the 8oz pack for less than 8oz of Oscar Meyer, but I can only get that about 50 miles away. But I don’t think Cudahay has that wide a distribution.

LOL! Being the only show in town, they have the customer over a barrel. It's HEB, which is a chain here but it does no good to complain to the HQ. If there's a good sale in the weely ads, it's a guarantee it won't be on the shelves. If there's a great national coupon, the product is pulled from the shelves. I've taken pictures of empty shelves. I've posted this story before about having to nearly make a drug deal over some fish. I live out in the country, as most of their customers do, so it's a major drive to go to the grocery store so you try to only have to do your shopping once or twice a month. Anyway, fish had been on sale for a couple weeks. Of course, no fish on the shelves. I kept calling every day and got the usual "the truck will be here tomorrow... the truck didn't deliver any." I called a couple of friends to see if they could get some from their stores but no luck. I finally got "the guy" to admit they had some in the back on the last day of the sale and I could get some if I got there before he got off work. My neighbor and I make the trip and ask to speak to "the guy". He can't be found and they act like they know nothing. I get the manager who is also clueless. I go to the back door and holler for "the guy" and get someone else who comes out, looks at the empty shelf, scratches his head and says they don't have any fish. I go back to the back and ask for "the guy" again and leave my neighbor. I then go back to the front to complain that I'd been promised and made the trip to which I get more head scratching. I go back to the back and "the guy" is getting my neighbor a little package of fish and starts to scurry behind the door again. I stop him and tell him I'm the one he promised the fish to and I want some now. He says he'll get me a couple pounds and I tell him I want two entire boxes. IIRC, they're 20 lb boxes. He motions me away from the other customers so they won't see and gives me two boxes. At the check out, the cashier and the sacker both look at each other and say they didn't know there were any fish and how did I get them. It's ridiculous. Yeah, HEB, you have very poor customer service and your product is going out the back door. I live simply and as cheap as I can and know I can only get basic food items but there are constantly about 20 items on the grocery list I can't find. Forget about molasses and tumeric because it ain't happenin'. Really, no molasses?!? You need cheese for a recipe? Ok, you have your choice of cheddar, mozz, colby jack, american slices, swiss is only Kraft slices, pepper jack slices and sometimes a Italian shredded blend. You want olives? The vast gourmet selection consists of canned large black pitted, canned black sliced, canned black chopped or for variety a jar of green olives! (I get seriously intimidated at a real grocery store with a dozen bins of fresh olives.) You want 10 steaks for the holiday grill? Sorry, you'll only find two packages of steak on the shelf because "the truck didn't bring any and there's none in the back." You want a sub roll? Oh, puleez, you ask for too much so make do hot dog or hamburger buns. Ao that, my FRiend, is why the Schlotsky bun dough I started this morning will never see any genoa salami. HAhahahahaha! I'm watching a woodpecker trying to get to the hummingbird food. He usually hangs upside down so has to crane his neck around to dip his bill but being upside down half the time he crashes when trying to fly off. This morning he's trying to go at it right side up. Problem is there's no foot hold on the bottle so he keeps falling off. Poor guy. What he won't do to get his sugar water fix.

bgill, you have my sympathy. I thought being 45 miles from a small city of 50k and needing to make a major shopping trip every 4-6 weeks was a hardship, even though we have both a Walmart Superstore and an employee-owned grocery 8 miles away and numerous small stores, butcher shops, bang-&-dent, Dollar Store and farm stores within 20-25 miles. Guess I am in food shopping paradise, in comparison.
My major gripe has been prices. I cannot believe the prices of meat, including poultry, even with all the competition listed above. DH has gout, so I have to prepare venison infrequently and bracket it between non-purine meals.
I think I will go say a little prayer of gratitude.
Wow, I love HEB in my area - never have any of those issues! You should write to the corporate office - sounds like really poor management or a low volumn store that is doing the opposite of what they should to bring up their profit margin.
One thing you could try, if you are friendly with any restaurant owners near you, is to have them order products for you from their foodservice distributors. If you are a good customer they may not have a problem doing that, it would gain them more business (with a hopefully nominal upcharge to you)

Would love to see that happen. Every time I went and got the ribs, they treated me very well. Even if I had not been there for a couple of years (being a mainlander), they still remembered me....
