You seem to ignore this passage. Why?

I don't ignore it. I read it in context. There is no other sacrifice for sins than what Christ did on the cross is what the writer is talking about.

We come to Him in faith.

19Therefore, brethren, since we have confidence to enter the holy place by the blood of Jesus, 20by a new and living way which He inaugurated for us through the veil, that is, His flesh, 21and since we have a great priest over the house of God, 22let us draw near with a sincere heart in full assurance of faith, having our hearts sprinkled clean from an evil conscience and our bodies washed with pure water. 23Let us hold fast the confession of our hope without wavering, for He who promised is faithful; 24and let us consider how to stimulate one another to love and good deeds, 25not forsaking our own assembling together, as is the habit of some, but encouraging one another; and all the more as you see the day drawing near. 26For if we go on sinning willfully after receiving the knowledge of the truth, there no longer remains a sacrifice for sins, 27but a terrifying expectation of judgment and THE FURY OF A FIRE WHICH WILL CONSUME THE ADVERSARIES. 28Anyone who has set aside the Law of Moses dies without mercy on the testimony of two or three witnesses. 29How much severer punishment do you think he will deserve who has trampled under foot the Son of God, and has regarded as unclean the blood of the covenant by which he was sanctified, and has insulted the Spirit of grace? 30For we know Him who said, “VENGEANCE IS MINE, I WILL REPAY.” And again, “THE LORD WILL JUDGE HIS PEOPLE.” 31It is a terrifying thing to fall into the hands of the living God. God is the judge and will determine if one has faith.

You will know when you die.

Thankfully we have the Word on this and not roman catholicism's doubt.

30Therefore many other signs Jesus also performed in the presence of the disciples, which are not written in this book; 31but these have been written so that you may believe that Jesus is the Christ, the Son of God; and that believing you may have life in His name. John 20:30-31

Clearly talking about a Christian who was justified and has fallen from grace. That means it's possible; Scripture doesn't waste time on impossibilities.

I have to wonder.....

What exactly is the mentality of a Catholic who tries so hard to get a believer to doubt his salvation?

It’s like if they can’t have it, nobody can.

Do they really want others to go through life in fear and trembling, expecting the worst, never knowing if you’ve been good enough until it’s too late?

What kind of god is that?

Not the One I find in Scripture, that’s for sure.
