I thought maybe they would have nightly cage matches to bring in business.

That sounds like a feast for sure. Homemade hollandaise has many tasty uses but none better than a side to fresh asparagus (or several other veggies I can think of).

I love asparagus especially the way you mentioned. Yum. However, if I walked in that restaurant and saw that picture, I’d walk out. How obscene to have those people on the wall.

I had to look for the recipe - thought I kept it on the PC because I shared it with someone on the other side of the world. So here it is if you want it - have fun if you make it.


Snap off the white bamboo-type ends of asparagus and rinse in cold water. I sometimes let them soak for about 10 minutes.

In a skillet, combine finely-chopped white/red onion, green/red/orange/yellow pepper, some Italian dressing, several pats of butter and some soy sauce. Medium heat (4/10) until reduced onions / browning.

While that’s going toss the asparagus in a large bowl, drizzle with olive oil and salt (or sea salt) and toss.

Into the skillet goes the asparagus. I add lemon pepper, garlic salt and concentrated lemon juice (1-2 tbsp. approx.). You could juice out a lemon, perhaps even slice it and add it in without the seeds.

Meanwhile, microwave some bacon, chop into 1/2 inch pieces, and slide all that bacon and fat into your skillet. I let it run in the med skillet (4/10) for 10 or 20 minutes; depends on how you like your asparagus.

THEN, yes, top with Parmesan cheese.

For a variation, grill the asparagus after the olive oil and salt toss for some nice grill marks, then toss in skillet.

I put some bacon in with my baked / roasted potato slices too.

Salt, paprika, lemon pepper, olive oil, parsley flakes, a little pepper, onion powder. Tossed in olive oil. Pan sprayed with a non-stick (butter flavor of course).

Chopped up potatoes, a bit of leftover celery — then a couple chicken boullion tossed with some water in the pan - over at 425 F for 90-120 minutes (check the water level every 30 mins).

The bacon I laid on top last 30 mins or so.

Throw in a few drops of Worcestershire sauce. Had that once at a fancy restaurant. Lemon, butter, and Worcestershire.

Can’t wait to hear back guys. I think you’ll like it.

My last version I altered slightly - was good but not awesome like the first time.

The first time I made it, it blew me away. Repeatedly.

Like I said, it replaced my steamed broccoli when I could still get steak years ago. Last time I had a steak was about 22 months ago.

But I eat just fine, thanks be to God for providing.

I’m gonna ping the prophecy list because while I gave them my (precut) ham steaks recipe, I didn’t give them the asparagus one, so I hope they enjoy it too. I only avoided asparagus my whole life until about 5 years ago. Oh well....

I’m using Soy Sauce (see above for recipe) but yeah, right in there.

I usually put Worcestershire in my meats (made a chuck roast for Thanksgiving). Would be very similar to the soy sauce (I almost always grill onion pieces in butter and soy these days).
