Never understood the fascination with mac and cheese. I always saw it as crap food, not really healthy and formulated with cheap, second rate ingredients.

Yes, if you're talking about that dog diarrhea that Kraft produces. Now mac and cheese made with real cheese, butter and cream is a different story.

Ramsbottom, John. 1953. Mushrooms and Toadstools. Collins. London, England. 306 pages, hardcover. An excellent book, you should read it. And I agree, homemade stuff is always better than the canned.

I now have the fixin’s for homemade, but last week I made a box of Aldi’s Cheese Club M&C [39¢] but with butter and heavy cream. Mixed in some crumbled ground round and was surprised at how tasty it turned out. Big freakin’ Lots wants a buck for one box of Kraft! NWIH, not at that price...

My family has been making it with Monterey Jack, sharp cheddar, Ricota or small curd cottage cheese, small amount of cream, and a couple of eggs, using large elbows, for generations. I make it is a large pan and freeze several blocks for later meals. It keeps well in the freezer and thaws out to taste just the way it did the day it came out of the oven.
