I am not big on this activist agenda that is evident in Sarasota schools. However, a lot of children already have meatless lunches.

These stories remind me of the “days of fasting” in Germany towards the end of WWI; the population was starving due to the blockade, the limited food available was increasingly composed of filler, and the government would call for “days of fasting” to support the war effort.
Imagine a school’s lunch budget for the year, then eliminate 20% of the meat from it (if they even get meat five days a week); brilliant!
I doubt the costs of school lunches for the families will decrease, though...
