Not technically accurate. The experienced woodstove cook learns to sense the temperature by the heat emanating from the surfaces. It is similar to scenes of people using irons, and testing them by a small application of moisture.

Timing was done in a similar manner. It may not always have been entirely scientific, but one way to judge the passage of time is to sing a song. Certain songs and hymns have a definite length that can be used to measure such events. Certainly, it appears to make for a happier kitchen.

There are other techniques as well; The completion of a baking cycle being noted by the "browning" of the crust, for example.

Experience, of course, is the teacher. When you have invested as much time and effort into your work as they had to, it made sense to pay attention, (and not be distracted by the TV!)
