It’s operating a slaughterhouse outside regulations.
I deal with a local one. Yup USDA regulates and inspects them.

Thank you for sifting through the click bait to ask the relevant question. It’s not like FDA is something new. How long has he been operating? How long has he known the fed would be pissed about his operation and chosen to do nothing about it? He could have been looking for alternatives or loopholes (i.e. kosher) all this time.

That being said I want the government out of his business and hope he finds a way through it.

THat is what I assumed was the issue. You can not slaughter your own cows hogs sheep etc.. and sell it to the public without it being USDA inspected at a USDA approved meat processor. The problem is there used to be small meat processing facilities in almost every small town but they have all but disappeared. The ones that are left have at least 18-24 month waiting lists. So if you have land and want to raise a few cows or pigs to sell cuts at the local farmers market you better have an appointment to get them processed before you eve buy the calf or feeder pig.
