How long has he known the fed would be pissed about his operation and chosen to do nothing about it? He could have been looking for alternatives or loopholes (i.e. kosher) all this time.

Government out of his business is a double edged sword. Are they intrusive? Probably. But one of the problems of living in a very safe society is that people don’t realize just how unsafe things used to be.
