I don't how this logically follows.

I have something today. I had this thing 100 million years ago. Therefore, it accumulated gradually. WHAT?!? This is actually evidence of an absence of evolution within the chosen timeframe.

Darwinian theory does not depend on human ability to explain particular features.

Like any theory, it explains a lot.

Saying that we do not understand a particular example only means we do not understand a particular example.

It does not invalidate Darwinian theory.

The hagfish poses very little challenge to Darwin/Evolution compared to the gaps in the fossil records for many creatures that could/should have left transitional fossil records.

Actually, pretty much all vertebrates can make “slime”. This animal just happens to have a specialized slime with these properties.

It is a vertebrate, by DNA/mRNA testing, related most closely with lampreys. It retains many primitive features, but has a notochord, the hallmark of vertebrates.
