Southerners make a white fruit cake that is legendary......
a very popular, 5 lb fruitcake.
MRS. HARVEY'S WHITE FRUIT CAKE
ING 4 c shelled pecans lb ea candied cherries candied pineapple 1 3/4 c flour 1/2 lb butter
cup sugar 5 lge eggs 1/2 tsp b/powder 1-2 oz vanilla extract 1-2 oz lemon extract
METHOD Chop nuts/fruits med-size; dredge with 1/4 cup of flour. Cream butter/sugar light and fluffy. Add well-beaten eggs and blend well. Sift rest flour and b/ powder; fold into egg and butter mixture. Add vanilla and lemon extracts; mix well. Add fruits and nuts, blending well. Grease 10” tube pan. Line with foil, parchment, or waxed paper. Grease again. Pour in batter. Place in cold oven; bake 250 deg 3 hours. Or line 2-9x5x3” foil loaf pans, greasing pans and liners well. Place in cold oven; bake 250 deg 2 hours. Cool in pan on cake rack.
COOKS NOTES: Mr Harvey liked pecans, so Mrs Harvey loaded up the cake with pecans.
You can use less or none at all. Can sub vanilla or almond for citrus extract.

In the 90s working as a cable splicer I would buy a pair of Timberlands every year. Then they became a fashion statement which drove the price way up. I switched to Wolverine and when my local store stopped carrying them, I switched to CAT. Then the store stopped carying them also. I spoke with the owner and he told me that I was his ONLY customer that bought these boots for WORK! He now carried ONLY Timberland as that was the only brand that the kids or women would buy. It didn’t pay for him to sell the other lines.
