About a mile from my house, there's a 7/11 managed by a guy very much like Apu. The 7/11 in the other direction is managed by what appear to be North Africans. Most fast-food places in my area are largely staffed by Hispanics, and - of course - the NBA is overwhelmingly black. There are several beauty shops run by Asian women. So, is it now an offensive "stereotype" to portray common everyday reality?
Personally, I am more offended by all those ads which DISTORT reality by portraying every African American family as living in an upscale neighborhood with a Subaru or Lexus in the driveway.

You summarize it very well. I haven’t seen The Simpsons in a long time, but I remember Apu being portrayed in a positive manner. I never thought, “Boy, that’s borderline, they better pull back on that.”

Every character on that show is a stereotype of some kind. Why are they only focused on Apu? God, I can’t stand leftists. They really do ruin everything.

Ironically, the Simpsons lampooned the ridiculousness of PC culture ruining comedy in an old episode, best summarized by the conversion of comically homicidal cartoon antagonists Itchy and Scratchy into best friends. They showed just how "fun" they were after they were made PC:
Itchey and Scratchy in "Porch Pals"
They used to mock such forces, now they tremble in fear and capitulate to them.

As long ago as the 1980's, Koreans were also known for owning convenience stores. There's the scene in the movie "Falling Down" in which the Michael Douglas character goes on a rampage in a Korean convenience store because he thinks the Coca Cola is overpriced.

Comedy is truly dead. The left has destroyed it entirely. The "I'm Offended" industry has wiped it out and it's likely never to return. Just last weekend, hubby and I watched the documentary "Can We Take a Joke?, on Netflix. It is a documentary featuring a group of stand-up comics discussing the change in people when it comes to comedy. They especially focus on today's college campuses. It was a bit funny; but, mostly it was depressing. I am glad I watched it; but, you are right, comedy is simply dead in our culture now. And, what is termed as comedy is, for me, never funny.
Caution of the documentary -- foul language will be heard.
