Have a great time HM!

I’m going to be offline much of the day today and tomorrow.
Today (and perhaps tomorrow afternoon) is the weekend my sister and I do our “Marathon Baking/Candy Making Weekend”.

We have a breakfast/brunch and gift exchange on the south end tomorrow morning with some girlfriends - have been friends for many years. Then we drive up north of Seattle to my cousin’s daughter’s lunch and cookie/bar/candy exchange.

I made Rocky Road yesterday (just need to put 10 plates together) - really easy recipe and my nephew and BIL love it. I doubled the recipe for tomorrow wrt the chocolate, though didn’t double the amount of nuts and marshmallows - just added them until it looked about right and used a 9x12 Pyrex casserole.

4 - 4-1/2 oz milk chocolate bars (I use Hersheys - 4.4oz)
3 cups mini marshmallows
3/4 cup coarsely chopped walnuts (I don’t always use the full amount)

Partially melt chocolate bars over hot water (I normally melt them almost all the way).
Remove from heat
Beat smooth
Stir in marshmallows and nuts
Spread in buttered 8x8x2 in pan
Chill
Cut when firm

That looks like a keeper.

I plan to ask hoosiermama for her spinach quiche recipe, too, after holiday activities.

Will win brownie points with my hubby if I made this for him.

He is a true chocoholic.
