Have the Israelis ever considered not selling their products to people they deem antisemitic?

How do you do that, by country? No practical way. Besides, just labeling a product Israel dissuades antisemites. I have suggested labeling by city in Europe. If I don't want to buy from Marsailles or Paris, then I could avoid it. But that kind of labeling only applies to Israel.

I'm not of the business of selling food products into EU countries but one assumes there is a European wholesaler through which Israeli wine is sold and distributed.

Once the wine is sold to the European wholesaler what possible business does anyone in Israel have with what happens next?

Talk about tilting at windmills...

-btw its also worth noting that wine worldwide is typically sold by appellation which denotes the geographic region (not country) from which the grapes used to make the wine are grown.
