From the article, in a note sent to the student's parents:
... If they have potatoes, the child will also need bread to go along with it....
A potato sandwich is considered healthy?

They also better ban some types of fruit for being racist.
Bananas are racist: Yellow on the outside, while on the inside.
Apples are racist: Red on the outside, white on the inside.
There are probably more, but being of Western European descent, by definition, I MUST be racist.

I guess there aren’t enough carbs in the potatoes alone.

Well, everybody knows that Oreos are a gateway cookie. Let kids eat those and the next thing you know they are looking for a bigger thrill. Sooner or later they start hitting the Pepperidge Farm Sausalitos, very addictive.

Every conservative should pull their kids out of government schools. We did. It’s not easy living on one income, but possible.

It probably is healthy, but it’s certainly not tasty.

Peanut butter is also frowned on, but a PBJ sandwich is certain to be far healthier than a potato sandwich.

My dad did in fact walk to school in the snow and before he left his mother gave him two potatoes that had been baking all night in the banked up ashes in the wood burning stove. He put one in each pocket to keep himself warm on the way to school and then ate them for lunch. (They were Irish).

Considering the teacher is clearly an idiot when it comes to nutrition, I think I’ll leave it up to the parents.

How on earth does the school have the time and resources to investigate the lunch of every single student ?

Not only would I send my kids with Oreos, but I would deep fry them first.

"Dear Parents, it is very important that all students have a nutritious lunch. This is a public school setting and all children are required to have a fruit, a vegetable and a heavy snack from home, along with a milk. If they have potatoes, the child will also need bread to go along with it. Lunchables, chips, fruit snacks, and peanut butter are not considered to be a healthy snack. This is a very important part of our program and we need everyone's participation."This teacher is an abject moron who knows nothing about nutrition.
