In centuries past it was slightly more humane — basically mass slaughter of the enemy. The Crusaders did not usually bother with torture.

In wars of time past there were only 2 options - win or lose. There were no protracted peace, agreements to coexist, demilitarized zones. You won or lost. The other group ceased to exist and the problem went away forever, which led to peace. You never left your enemy in a position to strike you again
