My family used to make rattlesnake chili with the snakes we killed for bounty in Texas. All you had to turn in for the bounty was the rattlers, so we made use of the rest by cooking the meat, and skinning the hide for belts, wallets, purses, etc.

I tried rattlesnake many years ago. One problem with snake meat is that it’s chewy, and downright tough if you over cook it even a little. And being that reptiles can carry some nasty bacteria, like salmonella, you have to make sure it’s well cooked. There might be some cooking methods that work well, like Sous Vide, or maybe ground into burger or sausage, but I’m in no hurry to try it.
