My family used to make rattlesnake chili with the snakes we killed for bounty in Texas. All you had to turn in for the bounty was the rattlers, so we made use of the rest by cooking the meat, and skinning the hide for belts, wallets, purses, etc.
I ate a rattlesnake but the meat way dry, no wonder you put it in chili.
