Why do we have to wait all the way to the end of the year to celebrate bacon?
Let's do what the catholics are doing, they have a fish day every week.

Try adding some cocoa powder to your cayenne and brown sugar mix.

You're right about cooking bacon in the oven - only way to go.
I recently discovered bacon burnt ends from a youtube video - cut 2 lbs of slab bacon into cubes, coat with brown sugar and a bit of your favorite rub, put on a grate and into your smoker (mild wood, maybe apple or alder) for up to 2 hours, checking halfway through.
Coat cubes with sauce of choice, back into smoker for 30 more minutes. Highly recommended.

The brilliant individual who suggested cooking bacon in the oven should be be winner of ‘The Silver Spoon’. This procedure makes for crisper and more healthy bacon. Wouldn’t you agree?

If I'm cooking bacon for a crowd I always use the oven. It's easier to control and frees up the stove for other things.

Oh! Thanks for the tip. Must try that technique.

We down here have lots of bacon still on the cloven hoof = wild boars.

Bacon is also good cooked in the microwave. The Ninja Foodie (air crisper) turns out a superior product as well.
