Only thing I had a problem with was the lynx. Tasted fine, but I was forever picking hairs out of my mouth.
Isn’t there a nasty disease from eating squirrel(squirrel brains that is). I guess that if you stick to the meat, you should be okay.
Obviously a p*ss-poor job of skinning that cat, LOL!
To me, it (Bobcat) had the texture of pork, but a flavor I’d never had. It was mild. Kind of nondescript.
Our usual weekly menu is basically:
Bear
Elk
Beef
Chicken
Pork
Fish
Repeat. He’s a meat, potatoes & veggie guy. Some nights I just feed him and have a salad. I can only take so much!
I FINALLY found a way to use up the wild hog he got in TX a few years back; it needs to be marinated overnight in a salt and sugar rub, then it can be braised with apples and cider and it’s FINALLY edible and not tough. Of course, we’re out of it now because once I found that way to cook it, it was really delicious!
Also an Instant Pot (pressure cooking) is fabulous for tough cuts of wild game. I did up some freezer-burned bear from 2015 for the dogs. They went nuts for it.
He’s bear hunting now, but doesn’t have a tag (thank goodness) but next up is Elk in CO. I like Elk; it’s great on the grill. :)
