No self respecting Southerner puts pickles on BBQ, at least none that I know....myself included. Maybe that’s a Carolina thing? Good BBQ shouldn’t even need BBQ sauce IMO.

I figured it was a Texas thing, seeing as how y’all call anything thrown on a grill over a fire barbecue. If sausages are barbecue McDonald’s mystery meat with pickles is, lol.

pickles and onions is a midwest/plains thing. I have to request it at bbq joints in Bama that I have visited. No one bats an eye, except for one guy who looked at me like I dropped off a spaceship.

Also, Link and brisket sandwiches seem to be unknown down here. pity.

So you are more of a dry rub person? I personally like the thinner bbq sauce that can soak right into the meat. Should be spicy with a hint of sweetness.

Yes, a good rub and slow smoke let’s the meat do the talking. Sauce on the side, only.
