No doubt but the difference is going into “Big Farm” pockets.

Time was, a man could feed his family from working in the tobacco field.

Now, you can’t get a white man(any American) in the fields unless it’s his own because the Mexicans will underbid whatever an American would offer.

So they quit and went on welfare.(Why rural Southern Americans are so damned fat, too)

As featured in NIGELLA SUMMER. An easy and beautiful recipe: first course before a plain roast chicken, a full-on dinner with next to no effort. NOTE be rather brutal as you tear off the lettuce from 1-2 icebergs. Then leave them in a sinkful of very cold water. They will arc into cups while you cook beef; drain well before piling on plate.

THAI BEEF LETTUCE WRAPS

MeTHOD warm tsp veg oil on med; add 2 fine-chp chillies; cook/stir 2-3 min. Add 12 oz grnd beef, turn up heat; break up w/ wooden spoon, cook 3-4 min (no trace of pink). Add scant tb fish sauce; stir/ cook dry. Offheat, stir in 4 chp white scallions, zested/juiced lime, coriander.

Turn beef into bowl, sprinkle w/ coriander just before serving.

SERVICE Arrange stacked iceberg lettuce leaves on plate. Guests DIY at table, filling cold crisp lettuce leaves w/ spoonfuls of sharp, spicy, hot, crumbled meat. Add bowls of lime wedges, carrot sticks, more coriander.

Might as well feast on an exquisite Hawaiian Salad---just ignore Kilauea. Salad named after great Maui produce grown
on the island made by an accomplished chef at a popular restaurant. Diners loved it served with a herbed crostini.

Maui Wowie Salad

PREP Combine 1/3 c crumbled feta, 2 tb capers, 1/3 c minced sweet onion, drizzle/toss w/ dressing; s/p to taste.
Combine/toss diced avocado w/ dressing, s/p to taste. Drizzle/toss julienned Bibb lettuce w/ bit dressing; s/p to taste.

DRESSING Puree 2 tsp minced shallots, tsp capers, 1/4 c lime juice. Add 1/2 c ol/oil, 3/4 tsp Dijon; blend well. Stir in tb honey.

PLATE Overlap thin tomato slices in open circle; dressed lettuce mounded in center, top w/ feta. Drizzle w/ dressing.

SERVE garnished w/ a toasted herbed crostini.
