ROFL.... I was thinking on “National Pizza Day”, why didn’t I pick up a Pizza? However, I have been cooking at home for so long, that I didn’t do it. Regrets! I got some healthy crusts and will make my own tomorrow. Less is more, now.

I have gone non-sugar, non-fake sugar, so STEVIA (a natural plant) is all I use, sparingly. Gonna have to make a cheesecake soon, my only craving. Fresh Fruit/Vegetables/Nuts and low carbs have been the agenda for quite awhile. I must stay healthy for those who need me. Doctor said last week I was doing great, and I lost 10 lbs in process. I am very close to my HS/early 20s weight now. :)

I hate shopping for clothes, but will need to by Summer, if I want my clothes to stay on...lol That is a Good thing!

Congratulations on your weight loss. I had to go low fat before I had my gall bladder out in 2015. Lost 10 pounds, and have kept it off. I’m 70, and the last one left in my family. I was the baby. My two sons are 51 and 47 respectively. My goal is not to outlive them. With my family’s lack of longevity, I believe in quality, not quantity. I don’t over indulge, but then again, if I feel like having KFC, or a chocolate sundae once in a while, I treat myself. My cholesterol and glucose numbers are good when I have fasting bloodwork every six months, so I might as well as enjoy myself.

Double Chocolate Cream Cheese Brownies

Brownies
1/2 cup unsalted butter
4 ounces 85-95% good quality chocolate, coarsely chopped
1 cup sugar
1 tsp vanilla extract
2 large eggs
1/2 cup all purpose flour
1/4 tsp salt
1/2 cup dark chocolate chunks or dark chocolate chips
Cream Cheese Layer
8 ounces cream cheese, room temperature
1/3 cup sugar
1 tsp vanilla extract
1 large egg

Directions
Preheat oven to 325 degrees F.
Line 9 x 9 inch square baking pan with aluminum foil across the bottom and up two opposite sides of the pan.
In stainless steel bowl placed over a saucepan of simmering water, melt butter and chocolate.
Remove from heat and stir in sugar and vanilla. Add eggs, one at a time, beating well after each addition. Use a spoon. Stir in flour and salt and beat, until batter is smooth and glossy and comes away from the sides of the pan (about a minute).
Remove 1/2 cup of the brownie batter and set aside.
Fold chocolate chips (or chopped chocolate) into remainder of brownie batter and then pour batter evenly onto bottom of prepared pan.
Using mixer or food processor, whip cream cheese until smooth. Add sugar, vanilla, and egg and process just until smooth.
Spread cream cheese mix over brownie layer. Spoon small clumps of reserved brownie batter on top of cream cheese filling. Then with knife or wooden skewer, swirl two batters without mixing them.
Bake in preheated oven for 25 minutes or until brownies start to pull away from sides of pan and edges just begin to brown.
Remove from oven and place on wire rack to cool.
Refrigerate brownies until firm enough to cut into squares (at least two hours).
Once chilled, remove brownies from pan by lifting with ends of foil and transfer to cutting board.
Cut into squares.

Original, Bailey’s Irish Cream and Caramel.

I don’t do sugar well either, so I am thinking I should try a cheese cake that is just the cheese part but not sweet. Maybe just a bit of puréed fruit. Hmmmm.

But I could make the cheesecake brownie for my family.

I saw this recipe posted today, but have not made it yet. All my brownie recipes are made in 9x13 glass casserole dishes lined with parchment paper. It would be pretty easy to double.
