For really-soft, really-fast digested, the ultimate would be "instant oatmeal." Starch breaks down stat, turns into sugar and goes straight to the bloodstream.
It takes a lot longer to get soft enough to eat too. When I was eating it regularly I'd soak it overnight to soften it. Otherwise it's like eating gravel.

I am glad you asked that question. My daughter keeps telling me to buy steel cut oats and every time I ask her why she gives me this look like I am crazy. I bet she doesn’t have a clue what they are.
I think the steel cut ones taste better. Better texture.

Must be, otherwise why would they charge more for it? :)
The answer is NO. But looking at the process from start to finish. Both are steel cut but the rolled or flattened oats go thru an additional process to flatten them. Some say it loses some oils when this happens but nutritionally them are close to exact.
