If the situation is really that dire, why can’t they get back to basics - start farming whole scale? I know I can survive as long as there is land and water. And I am not a farmer.

Yes. But remember that most Americans who can repair, design or build nearly anything are being driven from place to place now by regulators, NIMBYs, all.
