I really don't see an economic value here, for a fairly reputable steak house to do this.
I don't know, just doesn't seem something I'd get too excited about.
I knew that Arby's did this, by the way.
They do it on their roast beef and if asked, they will admit it.
The big issue is the kosher aspect of it...after all it is a pork derivative.
It's a natural product, but still a pork derivative...so the public has the right to know.

He was just showing the basic process. If you were to do this on a industrial level it could be quite profitable.
