Not limited to chinese restaurants. Some of very “best” ( most expensive famous places - where big movie stars eat) have been seen with rats and vermin running free through the kitchen. ( not all restaurants of course )
when I worked at a grocery store, I used bleach to clean the “porch” in front of the store
CUSTOMER: Waiter, there’s sand in my General Tso’s Chicken!
WAITER: Dat no sand. Dat Himalayan rock salt.
CUSTOMER: How do you know that?
WAITER: We find himalayan out back in street!............
They should market it as urban tenderized meat and double the price.
Isn’t pounding your meat on the sidewalk a common event in San Francisco?

Thank goodness it wasn’t a cat. I’ve actually seen Chinese guys in Golden Gate park handing out cat treats to strays who ended up in his stew pot.
If you live in SF or anywhere that lots of Chinese people live, for heaven’s sake keep your cats at home.

If you like your multiculturalism, you can keep your multiculturalism. Period.
Would you rather have that cook do his tenderizing somewhere outside the public’s view in, perhaps, an even dirtier place? I understand that San Franfreakshow sidewalks are often used as a place to relieve oneself. Perhaps some chemicals inherent in urine will provide the required meat tenderizer.
Always remember that the Chinese had a sophisticated cuisine using chop sticks when our ancestors were still gnawing meat from the bones, using only their dirty hands as table tools. Apparently they all survived.
