What cultural changes caused people to go from the radical, “anti-Establishment” 1960s and cynical Watergate/post-Vietnam/“Do your own thing” 1970s to the gullible, government-believing/medical expert-worshiping 2020s?

Instead, they were told stay at home, isolate yourselves, distance and obey. And they went along with that too. Until the George Floyd protests when they were told that woke protests were exempt from transmission risk.
And they went along with that too. And after that vaccines and mandates.
And now they are told that they have to sacrifice their own kids to groomers and perverts to be transed and pozzed. And they are going along with that, as well.
So-called 'free thinking" has never moved beyond a knee-jerk 'progressive' rebellion against America's traditional Christian grounded civilization. Progress has always been that, so as America's traditional civilization was grounded in man created in the image of His creator, progress meant rejection of God-created soul (ie., John Dewey). As our traditional civilization was moral, progress means immorality. As our Constitutional rights, with the most important being life, are offensive, then progress means rejection of our Constitution and embrace of death in the form of abortion for any reason, euthanasia, terror, and violence.
Progressivism is the inverse of God the Father, and all things good, right, and natural, which makes it a demonic philosophy.
Ok, I am going to ask. Why do people write the word as G-d instead of just writing God?

I think it’s out of respect for the awesomeness of God. I believe the Israelites of the O.T. wouldn’t even speak the word, “Yahweh”, out of respect. (But I’m not sure.)
religious aka Orthodox Jews do not write his full name because it may be erased / destroyed. G-d’s name in itself is considered holy so we will only write it in full on holy objects like a Torah scroll or a mezuzah.
We don’t even say his proper name ever — basically it’s the “witnesses” except in hebrew it’s pronounced with a Y instead of a J.
In theory if I buy a newspaper and it has G-d’s name in it somewhere, it is supposed to be ritually buried. in current practice it is generally done for religious books/papers for the most part. Pretty much every orthodox Jewish shul / house has a “sheimos” depository (shaim in hebrew means name so it’s a place to get rid of holy papers)
In computer usage, there is much dispute whether erasing holy names is considered erasing G-d’s name, which is a big desecration for us.
so to keep G-d’s name holy, It’s only written for holy purposes.

You are right but push it one step further: the people you are discussing are manifesting what is called “reprobation”; it is spiritual psychopathy/sociopathy and the definitive clinical description is found in Rom. 1:18-32 and II Tim. 3:1-5.

The pathology is spiritual darkness of the mind. Those who exhibit this spiritual darkness dwell in Satan's Kingdom even though they occupy space with all of God's children who dwell in His kingdom.
Those 'children' of Satan's under discussion are under his controlling influence. Some of them, Margaret Sanger, Kinsey, John Dewey, Karl Marx, Nietzsche, Stalin, and Trotsky for example, were of a mind with him. They did his work here in this world.
Globalists are of a mind with him and do his work in many ways. For example: murderous depopulation schemes, the mRNA injections and intention of making humanity eat insects
