That’s true in some instances, but not always. I have eaten raw ghost peppers and that was not good—it was a local shop that sold ghost-pepper tacos as a promotion, but they just put diced peppers on tasteless chicken. It was bad and had no taste other than heat. However, I’ve had well-prepared Mexican and Indian food that I really enjoyed that was just as hot, but brought out the depth of flavor.

Some of us like extremely hot pepper sauces that are pretty much all pepper taste. Each hot pepper has a different taste and a unique profile. Once you get past the heat, there’s a huge difference between a jalapeño, Tabasco, Serrano, habanero, scorpion and ghost. Peppers are fruits and are as distinctive as apples.
